1 pound smoked turkey, thick-chopped

2 cups shredded cabbage

1 tablespoon chili powder

1 to 2 chipotle (smoke-dried jalapeno)

1 cup tomato sauce

3 chopped onions

6 ounces or 1 1/12 cups shredded sharp cheddar or Pepper Jack cheese

2 tablespoons olive oil

4 (12 inch tortillas)

2 tablespoons chopped flat-leaf parsley or coriander leaves

1 cup of crème fraiche

1 vine seeds and finely chopped yellow or orange tomato

Start with this chimichanga recipe by preheating the oven to high or 420 degrees F.

Prepare filling for tortillas.

Make tortillas. Put tortillas on a kitchen towel and heat in the microwave high for 1 minute.

On a flat surface lay a tortilla and top with a generous amount of cheese on one side. Raise a quarter of the stuffing on the tortilla, then pull up the sides. Roll the tortilla lightly. Repeat this step for the rest of the tortillas.
