This is an easy healthy breakfast recipe that will keep you satisfied and excited long into the lunch hour.
Ingredients (serves 2)
4 slices of turkey bacon
2 flax muffins (You can find flax muffins at your local grocery store. We also have a recipe bound at the bottom if you want to make them yourself)
To start, heat a pan on medium-high heat. Spray the pan with Pam and start boiling the eggs. You can cook the eggs whatever you like. I myself prefer to be too light, but scrambled or otherwise is just as good.
Cook the eggs for completion and set them aside. Now you can start preparing the turkey bacon. Don’t be afraid of the eggs getting cold, turkey bacon cakes in less than five minutes.
When making turkey bacon, get grapefruit ready. Cut the grapefruit in half and sprinkle the tops of each half with Splenda, not sugar. Sugar adds unnecessary calories to the meal and will only give you a drop in energy later. You can serve the grapefruit without Splenda if you like, but many people think the taste is a bit too bitter without anything sweet to offset it. Also, be sure to serve the grapefruit with a spoon!
The bacon should come close to done now. As a final step, I would like to heat my muffin for approx. 15 seconds in the microwave. The hot buns taste a little better.
Now your meal should be done. Pour yourself a nice glass of orange juice, water or milk, put everything on a plate (don’t forget salt and pepper) server and enjoy!
