Healthy Meals | Basically with Babish

Ingredients and shopping list
+ For cashew cream:
Cashew nuts (raw and unsalted)

+ Overnight oats (366 calories, 17 g fat, 9 g protein, 40 g carbohydrate per serving)

1/2 cup of old-fashioned oats
1/4 cup chia seeds
1/4 cup of cashew cream, diluted with 3/4 cup of water to make cashew milk
Vanilla extract
Artificial sweetener of your choice
Nips of kosher salt
Berries and mint for topping

+ For the Turkish Bacon BLT (357 calories, 9 g fat, 36 g protein, 37 g carbohydrate per serving)

4 low fat turkey bacon slices
3 tablespoons cashew cream with sprinkle of mustard powder, cayenne pepper, garlic powder, onion powder, salt and pepper (to make “mayo”)
1 heirloom tomato, thinly sliced
Sprouted whole grain bread, lightly toasted
Spinach or butter salad

+ For Cashew Chicken Salad (439 calories, 18 g fat, 52 g protein, 17 g carbohydrate per serving)

3 chicken breasts, butterfly and knock to a uniform thinness
2-3 tablespoons cashew cream
1 apple, dice
4 green onions, chopped
2-3 tablespoons chopped parsley
Sprinkle with curry powder
Kosher salt and black pepper

+ For shrimp paste with garlic and basil (472 calories, 14 g fat, 30 g protein, 42 g carbohydrate per serving)

4 grams of slow red paste
2 tablespoons olive oil, divided
1/2 pound of shrimp, shelled and developed (shells optionally reserved)
1 shallot, finely chopped
3 cloves of garlic, crushed
1 teaspoon dried oregano
8 ounces cherry tomatoes, halved
1/4 cup packed basil leaves, chopped
1/4 cup dry white wine (optional)
1/4 cup cashew cream
1/4 cup packed parsley, chopped

Special equipment:
High powered blender (for cashew cream)
